Method: Stovetop, Slow Cooker
4 pounds (1.8kg) of beef bones with marrow
4 carrots, chopped
4 celery stalks, chopped
2 medium onions, peel on, sliced in half lengthwise and quartered
4 garlic cloves, peel on and smashed
½ teaspoon of sea salt
1 teaspoon of whole peppercorns
2 bay leaves
3 sprigs of fresh thyme
6 sprigs of parsley
¼ cup of apple cider vinegar
20 cups of cold water
Put all the ingredients in a stovetop stock pot or slow cooker with a 9.5 litre capacity.
Turn on the slow cooker and get ready to cook for a minimum of 36 hours, which may require 3 cycles on the typical slow cooker with a maximum 12-hour setting (unless you’re able to set the slow cooker for 36 hours).
If using a stovetop, bring the big pot to a boil over high heat; then, lower the heat and let it simmer.
Skim the fat that occasionally rises to the surface in the slow cooker or pot.
Let it simmer for 36 to 48 hours
Remove the broth from the heat and allow it to cool slightly.
Remove the solids, then drain the broth into a glass container using a strainer. Let the broth cool to room temperature.
It is recommended to use grass-fed beef bones for the best flavour and nutrient content.
When using the broth in other recipes, do remember to add salt to taste.
